Where does good food come from?

A lot of people are in a constant quest for good food. New restaurants open here and there offering a variety of meals inspired by Oriental, Mexican, Italian, Korean, Greek cooking and so on, but sometimes our taste buds remain insatiable. And sometimes, the food made available in these restos are highly commercialized. This is exactly why some people take it upon themselves to cook up their own meals rather than to eat out. On a personal note, I believe that a generously prepared home meal is always twice as good as a meal cooked in a chaotic restaurant kitchen no matter how many stars it may have. But, lucky for us foodies here in Dumaguete, there is a new place, nestled within the outskirts of the city where one can find gourmet pizzas, burritos, spaghetti, carbonara, sandwiches and a whole lot more, cooked with precision and passion in a kitchen built with love.

I’m talking about Daddy O’s Diner, located in Melrose Beach, Banilad. The owner of this establishment is William Teves, a marine from the United States, and a good friend. William also happens to be the famous marine that made local headlines for beating up a snatcher that attempted to rob him and his wife Tats. We also worked together not so long ago in the same company. At that time, his diner was still in the works, a dream, a rough sketch in the drawing board. Whenever we got together in the office, we talked about a lot of stuff, but mostly about food and his diner. He was very passionate about this dream of his, and even at that time when we were still trying to come up with a name for the would be place, he had already started cooking and selling his signature burritos and Stromboli to the public. He juggled corporate work and kitchen duties until eventually the time came when he bid his job goodbye to focus on his dream. So when the day came that I finally found myself sitting inside his diner, on a couch that he built himself, I couldn’t help but be amazed by all that he has done. And of course, the food he served left me speechless and raving for more.

That time, I was with the extended team of Food Trip Dumaguete and we were there in Daddy O’s Diner for a special occasion just having a great time. The diner’s interior has a rock and roll vintage vibe to it, and most of the furniture, including the counters, the brick oven and the walls of the place were skillfully crafted and made by William himself. Every inch of the place was built by him, and all the dishes that come out of his kitchen cooked specially by him as well. Aside from being the chef, he’s the mason, the carpenter and the manager of Daddy O’s. And wait, he is also the delivery guy, since at this time Daddy O’s caters more to deliveries.

We are very thankful to William and his wife Tats because our team was one of the few special people who were able to enjoy the food at Daddy O’s. That day it seemed like we were having a banquet! The food just kept on coming, and we could see Will prepare one dish after the other right across the counter. We saw how dedicated he was in making each one, not to mention how generous the portions were too. Each bite came with a burst of flavors! We felt happy, full, satisfied and at home.

The food coma came afterwards of course. But kidding aside, knowing that we were eating in a place that meant a lot more than just a business to a man who poured out his heart into making his dream come true inspired all of us. And eating the meal he prepared out of genuine love and compassion was one of the best dining experiences we have had so far. Try out their meals for yourselves!
